A trailing-edge dimmer should be quiet with LEDs; a buzz points to a non-dimmable bulb or a loose connection. There's no standard minimum load: use the minimum and maximum printed on your dimmer — with 5 W GU10 bulbs a 10 W minimum needs 2, a 40 W minimum 8. The bulb must be marked dimmable.
